Passionfruit whipped cream is delicious with meringues or spread on a pavlova. Makes approximately 400 ml.
Ingredients:
- 1 teaspoon castor sugar
- 250 ml cream
- 3 passionfruit
Method:
- Combine the sugar and cream in a bowl, whip until stiff.
- Cut the passionfruit, scoop out the pulp and fold into the cream.
- Cover and chill until needed.
- Serve with fresh or stewed fruits, as a filling for sponges or combined with passionfruit jam or hot scones.
