Ingredients
- 1/2 cup butter or margarine(125 g)
- 1 1/2 cup sugar
- 2 eggs
- 2 cups plain flour
- 1 cup mashed banana
- 4 tsp milk
- 1 tsp bicarbonate soda
- 1/2 teaspoon salt
Method
- In a bowl put the butter and sugar and beat gradually until light and fluffy. Add eggs one at a time, beating well after each addition. Add mashed banana and milk and slowly mixed.
- Sifted together in a large bowl: 2 cups plain flour, 1 tsp bicarbonate soda and 1/2 teaspoon salt. Add the dry ingredients to the banana mixture, stirring until blended.
- Pour into the loaf pan or square pan. Bake 180C for 1 hour or until a skewer comes out clean when tested. Lift into rack to cool and cut into squares.
- Serve warm with butter or whipped cream and fruit.
