Rambutan (Nephelium lappaceum, L.) Indigenous to Malaysia and Indonesia is botanically a drupe of Sapindaceae family.  Sometimes called the 'Hairy Litchee' because of the similarities in texture and taste, although it has a sharper taste.  The fruit has bright red, yellow or orange leathery skin when ripe and covered with tubercles (soft fleshy spines or hairs). 

The fruit contains a single seed with  sweet acid and juicy flesh which separates easily. Once peeled, the flesh of the fruit can be used like the lychee, can be eaten alone, or added to salads, made into jams, or jellies. Canned, bottled or dried. Keep refrigerated.
