Mortar and Pestle

Spices and the like are ground in a mortar- (a solid bowl) with a pestle (a small, heavy truncheon-like implement).  Usually made from porcelain, marble or stone, a mortar and pestle are sold as a pair by kitchenware suppliers and are available in supermarkets.  Granite mortar and pestles are also available at a very reasonable price from some Asian food stores.

Choose a large mortar and pestle for grinding spices and herbs and aromatics for curries – a 20 cm mortar will come with a suitably heavy pestle.

Held just above the mortar by its narrower end, the pestle is dropped onto the ingredients, with the force of the fall and the weight of the pestle doing all the work for you.
